Ingredients

  • 1 pkg. crescent rolls
  • 1 stick oleo
  • 1/2 c. chopped onion
  • 4 c. thinly sliced zucchini, peeled and cored
  • salt and pepper
  • 2 eggs
  • 2 c. Mozzarella cheese
  • 2 Tbsp. parsley flakes
  • 1/4 tsp. garlic powder
  • 1/4 tsp. oregano
  • 1/4 tsp. sweet basil
  • 2 Tbsp. mustard

Method

  • Place 8 crescent rolls in pie plate, forming a crust.
  • Spread 2 tablespoons mustard on crust.
  • Melt oleo in skillet.
  • Add onion, zucchini, salt and pepper (to taste).
  • Cook 10 minutes.
  • Beat 2 eggs in bowl and add 2 cups of cheese.
  • Stir together zucchini, eggs and cheese with seasonings.
  • Place in pie shell and bake 10 minutes at 375°.
  • Cover with foil and bake 10 minutes more until set.
  • Let stand a few minutes before slicing.
