Ingredients

  • 1 very large or 2 small zucchini
  • 16 oz. Mozzarella cheese
  • Locatelli or Romano cheese
  • 2 cans Hunt's tomato puree
  • 1 1/2 lb. sausage
  • 1 onion, chopped
  • 3 cloves garlic
  • chopped parsley
  • basil
  • salt and pepper
  • 1/3 c. olive oil
  • 2 eggs, beaten
  • bread crumbs
  • 3 Tbsp. grated Parmesan

Method

  • Prepare Sauce:
  • In large pot add oil, chopped onion and about 8 sausage links and brown.
  • Add 2 cans tomato puree and spices, garlic, parsley, basil, salt and pepper and 3 tablespoons grated Parmesan.
  • Simmer on low heat, stirring regularly for 1 to 1 1/2 hours.
