Ingredients
- 4 zucchini, 5 " long
- 2-3 garlic cloves, mashed
- 3 TBs butter
- salt and pepper
- dash oregano
- 2/3 cup grated Parmesan/Romano cheese
Method
- steam zucchini until crisp, 8-10 minutes. Remove from pan and slice 1/4" thick.
- Preheat broiler (rack should be 5"from heat)
- Combine garlic, butter, salt and pepper and oregano and spread on zucchini slices. Top with cheese and broil until golden brown.
