Ingredients

  • 2 12 cups flour
  • 1 12 cups sugar
  • 1 cup chopped pecans
  • 1 12 cups oatmeal
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 4 eggs
  • 2 cups shredded zucchini
  • 34 cup vegetable oil

Method

  • In bowl mix together flour, sugar, pecans, oatmeal, baking powder, salt and cinnamon.
  • Add eggs, zucchini, and vegetable oil.
  • Mix until ingredients are barely moistened.
  • Batter will be lumpy.
  • Put in greased muffin tins.
  • Bake in 350 degree oven for 15 to 20 minutes.
  • Makes 21 regular sized muffins.
