Ingredients
- 4 c. flour
- 1 c. sugar
- 1/2 tsp. salt
- 3 sticks oleo
- 8 to 10 c. cubed zucchini
- 2/3 c. lemon juice
- 1 c. sugar
- 1 tsp. cinnamon
Method
- Peel zucchini.
- Slice lengthwise in half, remove seeds and cube.
- Place zucchini in a large skillet with the lemon juice. Cover and cook until zucchini becomes transparent and soft (about 15 to 25 minutes).
- Add sugar and cinnamon.
- Simmer for 2 minutes. Add 1/2 of remaining crumb mixture to zucchini.
- This will thicken it.
- Spread zucchini onto baked crust.
- Sprinkle remaining half of crumb mixture on top.
- Bake at 375° for 35 minutes.
- Tastes like apple pie.
