Ingredients

  • 4 c. flour
  • 1 c. sugar
  • 1/2 tsp. salt
  • 3 sticks oleo
  • 8 to 10 c. cubed zucchini
  • 2/3 c. lemon juice
  • 1 c. sugar
  • 1 tsp. cinnamon

Method

  • Peel zucchini.
  • Slice lengthwise in half, remove seeds and cube.
  • Place zucchini in a large skillet with the lemon juice. Cover and cook until zucchini becomes transparent and soft (about 15 to 25 minutes).
  • Add sugar and cinnamon.
  • Simmer for 2 minutes. Add 1/2 of remaining crumb mixture to zucchini.
  • This will thicken it.
  • Spread zucchini onto baked crust.
  • Sprinkle remaining half of crumb mixture on top.
  • Bake at 375° for 35 minutes.
  • Tastes like apple pie.
