Ingredients
- 6 c. unskinned zucchini, cut in small cubes
- 1 medium onion, diced
- 1 to 2 large carrots, shredded
- 1 c. sour cream
- 1 can cream of chicken soup
- 1 box chicken Stove Top stuffing
- 1 stick butter, melted
Method
- Prepare zucchini, onion and carrot.
- Boil in pan until just tender, about 10 to 15 minutes.
- Combine sour cream and soup. Mix well; set aside.
- In another bowl, put complete contents of stuffing mix and add melted butter.
- Mix together well.
- Set 1/4 to 1/2 cup aside to sprinkle on top.
- When vegetables are tender, drain.
- Put all ingredients, except topping, in a large bowl. Mix together with a spoon.
- Pour in greased casserole dish. Sprinkle with reserved stuffing mix.
- Bake at 350°, uncovered, for 30 to 40 minutes.
