Ingredients

  • 6 c. unskinned zucchini, cut in small cubes
  • 1 medium onion, diced
  • 1 to 2 large carrots, shredded
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1 box chicken Stove Top stuffing
  • 1 stick butter, melted

Method

  • Prepare zucchini, onion and carrot.
  • Boil in pan until just tender, about 10 to 15 minutes.
  • Combine sour cream and soup. Mix well; set aside.
  • In another bowl, put complete contents of stuffing mix and add melted butter.
  • Mix together well.
  • Set 1/4 to 1/2 cup aside to sprinkle on top.
  • When vegetables are tender, drain.
  • Put all ingredients, except topping, in a large bowl. Mix together with a spoon.
  • Pour in greased casserole dish. Sprinkle with reserved stuffing mix.
  • Bake at 350°, uncovered, for 30 to 40 minutes.
