Ingredients
- 6 c. sliced zucchini
- 1/4 c. chopped onion
- 1 can cream of chicken soup
- 1 c. light sour cream
- 1 c. shredded carrots
- 1 (8 oz.) pkg. herb stuffing mix
- 1/2 c. oleo
Method
- Cook zucchini and onion in boiling water for 5 minutes. Combine sour cream and soup. Stir in carrots, onion and zucchini. Combine stuffing and oleo. Spread half of it in the bottom of a 7 x
- 11-inch baking dish. Spoon vegetables on top.
- Place remaining stuffing on top of vegetables.
- Bake at 350° for 30 minutes. Serves 8.
