Ingredients

  • 1 c. shredded sharp Cheddar cheese
  • 1/2 c. cottage cheese
  • 4 eggs, beaten
  • 3 Tbsp. minced fresh parsley
  • 1/4 tsp. pepper
  • dash of garlic
  • 2 lb. zucchini, sliced 1/4 inch
  • 3/4 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1/4 c. butter

Method

  • Preheat oven to 375°.
  • Butter 2-quart baking dish.
  • Combine first 6 ingredients in bowl and mix.
  • Place layer of zucchini in baking dish and layer with some cheese mixture.
  • Repeat, ending with cheese mixture.
  • Combine bread crumbs and Parmesan cheese. Sprinkle over casserole.
  • Dot with butter.
  • Tent with foil and bake 25 minutes.
  • Remove foil and bake additional 20 minutes.
