- 1 cup butter
- 1/2 cup flour
- 3 cup chicken broth
- 2 cup milk
- 1 cup heavy cream
- 1/2 medium coarsely chopped onion
- 1 stick coarsely chopped celery
- 1/2 tsp bl.pepper
- 1 cup shredded cheese it called for cheddar but I used a mex.mix
- 1/4 cup chopped string carrots I added these you don't need too
- 1/2 lb fried and drained bacon chopped up small
- 4 gr.onions
Method
- This is how I did it:I measured ch.broth into into medium-sized sauce pan to start warming it up.
- Use soup pan and start melting the cup of butter on low heat.
- Use another medium-sized pot to measure in cream and milk
- I had my potatoes peeled and cut into bite size pieces and added them to broth.Keep it at low boil until potatoes are tender about 10 minutes.
- Next I added onion,celery and carrots to the melted butter.Saute for 5min.
- Start warming milk and cream and DO NOT LET BOIL!
- Add flour to sauteed veg and stir,add heated milk/cream continually stirring until there are no flour lumps.
- Slowing add potatoes and broth to soup pan stirring often.Add pepper.
- I added about half the bacon and cut up green onions just using the bottoms.
- I used shredded cheese,crumbled bacon and cut up gr.onion tops to top it.
