Ingredients
- 4 potatoes, peeled and chopped fine
- 1 carrot, peeled and chopped fine
- 1 large onion, chopped fine
- 2 c. chicken broth
- 1/4 c. melted margarine
- 3 Tbsp. flour
- 2 c. milk
- salt and pepper to taste
- 2 c. grated sharp cheese
Method
- Combine first 4 ingredients in large saucepan.
- Simmer, loosely covered, for 15 minutes.
- Blend margarine and flour in saucepan. Whisk in milk gradually until smooth.
- Add cheese.
- Cook over low heat until melted, stirring constantly.
- Add salt and pepper.
