Ingredients

  • 4 potatoes, peeled and chopped fine
  • 1 carrot, peeled and chopped fine
  • 1 large onion, chopped fine
  • 2 c. chicken broth
  • 1/4 c. melted margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • salt and pepper to taste
  • 2 c. grated sharp cheese

Method

  • Combine first 4 ingredients in large saucepan.
  • Simmer, loosely covered, for 15 minutes.
  • Blend margarine and flour in saucepan. Whisk in milk gradually until smooth.
  • Add cheese.
  • Cook over low heat until melted, stirring constantly.
  • Add salt and pepper.
