Ingredients

  • 1 1/2 cup A.p flour
  • 1 1/2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 2 large Eggs
  • 2/3 cup Sugar
  • 3/4 cup Unsalted Butter melted
  • 2 tsp Vanilla extract
  • 1/2 cup Milk
  • 10 oz Crushed pineapple

Method

  • Preheat oven to 350
  • Whisk flour, bk.
  • Pwdr, salt together.
  • In another bowl best eggs and sugar until light and fluffy (bout 2 min)..
  • While beating, add butter and vanilla.
  • While mixing slowly, add half of dry ingredients, then all the milk, followed by the rest of dry ingredients.
  • Add (drained-save juice) crushed pineapple and stir in.
  • take care not to over mix.
  • Fill cupcake pan with liners or pan spray.
  • Fill 1/2 -3/4 of the way full.
  • Bake at 350 for 20-25 mins untill tooth pick comes out clean.
  • Look for pineapple buttercream frosting!
