Ingredients

  • 1 (6 oz.) pkg. strawberry gelatin
  • 1/2 tsp. salt
  • 2 c. hot water
  • 1 (8 1/4 oz.) can crushed pineapple
  • 2 Tbsp. lemon juice
  • cold water (for amount see directions)
  • 1/2 c. chopped walnuts
  • 1/2 c. diced celery
  • 2/3 c. chopped raw cranberries
  • 2 apples, chopped

Method

  • Dissolve gelatin and salt in hot water.
  • Drain pineapple, saving syrup.
  • Combine syrup and lemon juice; add enough cold water to measure 1 2/3 cups liquid.
  • Add this to gelatin mixture. Chill until mixture begins to thicken slightly.
  • Fold in walnuts, celery, cranberries, crushed pineapple and chopped apples.
  • Turn into oiled 1 1/2-quart mold and chill until firm, at least 4 hours.
  • Unmold on lettuce leaves.
