Ingredients
- 1 (6 oz.) pkg. strawberry gelatin
- 1/2 tsp. salt
- 2 c. hot water
- 1 (8 1/4 oz.) can crushed pineapple
- 2 Tbsp. lemon juice
- cold water (for amount see directions)
- 1/2 c. chopped walnuts
- 1/2 c. diced celery
- 2/3 c. chopped raw cranberries
- 2 apples, chopped
Method
- Dissolve gelatin and salt in hot water.
- Drain pineapple, saving syrup.
- Combine syrup and lemon juice; add enough cold water to measure 1 2/3 cups liquid.
- Add this to gelatin mixture. Chill until mixture begins to thicken slightly.
- Fold in walnuts, celery, cranberries, crushed pineapple and chopped apples.
- Turn into oiled 1 1/2-quart mold and chill until firm, at least 4 hours.
- Unmold on lettuce leaves.
