Ingredients
- 4 slices veal
- 1 c. beef broth
- juice of 1 lemon
- 3 Tbsp. butter
- 1 small can mushrooms
- 1 Tbsp. cornstarch
- 4 tomato slices
- 4 slices Swiss cheese
Method
- Pound veal steaks thin.
- Dip in egg and Ritz cracker crumbs. Brown quickly in hot skillet.
- Place in ovenproof dish.
- Top veal with tomato slices.
- Combine broth, butter, lemon juice, mushrooms, salt and pepper. Simmer and thicken with cornstarch. Pour over veal and cover. Refrigerate.
- Can be made the day before. Bake, covered, for 40 minutes at 350°.
- Remove. Top with cheese. Bake until cheese melts.
- May substitute chicken breasts.
