Ingredients

  • 4 slices veal
  • 1 c. beef broth
  • juice of 1 lemon
  • 3 Tbsp. butter
  • 1 small can mushrooms
  • 1 Tbsp. cornstarch
  • 4 tomato slices
  • 4 slices Swiss cheese

Method

  • Pound veal steaks thin.
  • Dip in egg and Ritz cracker crumbs. Brown quickly in hot skillet.
  • Place in ovenproof dish.
  • Top veal with tomato slices.
  • Combine broth, butter, lemon juice, mushrooms, salt and pepper. Simmer and thicken with cornstarch. Pour over veal and cover. Refrigerate.
  • Can be made the day before. Bake, covered, for 40 minutes at 350°.
  • Remove. Top with cheese. Bake until cheese melts.
  • May substitute chicken breasts.
