Ingredients

  • 2 c. small white beans
  • 1/4 lb. lean salt pork, minced
  • 1 c. dark brown sugar
  • 1 medium onion, chopped
  • 1 tsp. salt
  • 1/2 c. lite molasses
  • 1/2 tsp. dry mustard
  • 1/4 tsp. ginger
  • 1 Tbsp. sugar
  • 2 qt. baking crock

Method

  • Wash beans and cover with 6 cups water.
  • Boil 3 minutes. Cover; let stand 1 hour.
  • Drain, throw away water.
  • Put fresh water over beans; add all ingredients and bring to boil.
  • Transfer to crock immediately.
  • Cover and place in 300° oven.
  • Bake 6 to 8 hours.
  • Uncover last hour to darken beans.
  • Add hot water if needed.
