- 2 c. small white beans
- 1/4 lb. lean salt pork, minced
- 1 c. dark brown sugar
- 1 medium onion, chopped
- 1 tsp. salt
- 1/2 c. lite molasses
- 1/2 tsp. dry mustard
- 1/4 tsp. ginger
- 1 Tbsp. sugar
- 2 qt. baking crock
Method
- Wash beans and cover with 6 cups water.
- Boil 3 minutes. Cover; let stand 1 hour.
- Drain, throw away water.
- Put fresh water over beans; add all ingredients and bring to boil.
- Transfer to crock immediately.
- Cover and place in 300° oven.
- Bake 6 to 8 hours.
- Uncover last hour to darken beans.
- Add hot water if needed.
