Ingredients
- 8 medium potatoes
- 2 Tbsp. butter or margarine
- 1/2 c. sour cream
- salt and pepper
- 1 c. grated sharp Cheddar
Method
- Grease potatoes well and bake in a 400° oven for 45 minutes or until soft.
- Split lengthwise; scoop out center into mixing bowl and set shells aside.
- Add butter, sour cream, salt, pepper and cheese to potatoes and mash until well mixed.
- Mound into shells. Place on cookie sheet and bake at 350° until lightly browned on top.
- May be frozen after filling and baked for about 40 minutes when ready to use.
