Ingredients

  • 8 medium potatoes
  • 2 Tbsp. butter or margarine
  • 1/2 c. sour cream
  • salt and pepper
  • 1 c. grated sharp Cheddar

Method

  • Grease potatoes well and bake in a 400° oven for 45 minutes or until soft.
  • Split lengthwise; scoop out center into mixing bowl and set shells aside.
  • Add butter, sour cream, salt, pepper and cheese to potatoes and mash until well mixed.
  • Mound into shells. Place on cookie sheet and bake at 350° until lightly browned on top.
  • May be frozen after filling and baked for about 40 minutes when ready to use.
