Ingredients

  • 8 oz. small sized shell macaroni
  • 1 Tbsp. olive oil
  • 1/4 lb. green beans
  • 1 (7 oz.) can water packed tuna
  • 1 c. thinly sliced zucchini
  • 1/2 c. shredded carrot
  • 1/2 c. olive oil
  • 2 Tbsp. wine vinegar
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 tsp. oregano
  • 1/4 tsp. basil
  • 2 Tbsp. chopped fresh parsley

Method

  • Cook macaroni according to package directions.
  • Drain.
  • Toss with 1 tablespoon olive oil and cool.
  • Clean green beans and cut into 1-inch pieces.
  • Steam for 5 minutes; drain and cool.
  • Drain and flake tuna.
  • Place macaroni, green beans, raw zucchini, carrots and tuna in medium bowl.
  • In a small bowl, place olive oil, vinegar, salt,
  • pepper, oregano and basil.
  • Stir with a whisk.
  • Pour over ingredients in bowl and toss lightly.
  • Sprinkle with parsley.
  • Makes 8 servings.
