Ingredients

  • 1 medium head cauliflower
  • 1/2 c. cooked tomatoes
  • 1 clove garlic
  • 3 Tbsp. oil
  • 1/2 tsp. salt
  • 2 Tbsp. grated Parmesan cheese

Method

  • Remove outer leaves and stalks from fresh cauliflower; separate into flowerets.
  • Cook in microwave until almost tender (approximately 8 minutes).
  • In a 1 1/2-quart casserole dish, cook garlic and oil, uncovered, for about 2 minutes.
  • Remove garlic and add hot, drained cauliflower to oil.
  • Cook, uncovered, for about 4 minutes.
  • Add salt and tomatoes.
  • Cover and cook for about 6 minutes or until hot.
  • Stir once during cooking.
  • Just before serving, sprinkle with Parmesan cheese.
  • Makes 4 servings.
