Ingredients
- 1 medium head cauliflower
- 1/2 c. cooked tomatoes
- 1 clove garlic
- 3 Tbsp. oil
- 1/2 tsp. salt
- 2 Tbsp. grated Parmesan cheese
Method
- Remove outer leaves and stalks from fresh cauliflower; separate into flowerets.
- Cook in microwave until almost tender (approximately 8 minutes).
- In a 1 1/2-quart casserole dish, cook garlic and oil, uncovered, for about 2 minutes.
- Remove garlic and add hot, drained cauliflower to oil.
- Cook, uncovered, for about 4 minutes.
- Add salt and tomatoes.
- Cover and cook for about 6 minutes or until hot.
- Stir once during cooking.
- Just before serving, sprinkle with Parmesan cheese.
- Makes 4 servings.
