Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 8 garlic cloves, chopped
  • 8 tomatoes, chopped
  • 1 cup water
  • 12 cup fresh basil, chopped
  • fresh ground black pepper

Method

  • 1.
  • In a saucepan or stock pot over medium heat, saute the onion in the oil until golden, about 5 minutes.
  • Add the garlic, tomatoes and simmer 5 minutes.
  • Add the water and simmer another 5 minutes.
  • Add the basil and simmer 1 minute longer.
  • 2.
  • Place all of the ingredients in a blender or food processor and blend until chunky, about 5 seconds.
  • Taste and season with pepper.
