- 1 clove garlic, minced
- 1 (1 lb.) can tomatoes (undrained)
- 2 (6 oz. each) cans tomato paste
- 1 Tbsp. sweet basil
- 1 (10 oz.) pkg. regular or whole wheat spinach lasagne noodles
- 3 c. tofu
- 1/2 c. grated Parmesan cheese
- 2 eggs, beaten
- 2 Tbsp. parsley flakes
- 1 tsp. fennel leaves (optional)
- 1 tsp. salt
- 1/2 tsp. ground pepper
- 1 lb. shredded Mozzarella cheese (4 c.)
Method
- Combine minced garlic, undrained tomatoes, tomato paste and sweet basil in small saucepan.
- Simmer for 30 minutes to make sauce.
- Set aside.
