Ingredients

  • 1 clove garlic, minced
  • 1 (1 lb.) can tomatoes (undrained)
  • 2 (6 oz. each) cans tomato paste
  • 1 Tbsp. sweet basil
  • 1 (10 oz.) pkg. regular or whole wheat spinach lasagne noodles
  • 3 c. tofu
  • 1/2 c. grated Parmesan cheese
  • 2 eggs, beaten
  • 2 Tbsp. parsley flakes
  • 1 tsp. fennel leaves (optional)
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 lb. shredded Mozzarella cheese (4 c.)

Method

  • Combine minced garlic, undrained tomatoes, tomato paste and sweet basil in small saucepan.
  • Simmer for 30 minutes to make sauce.
  • Set aside.
