Ingredients

  • 3 tbsp Tikka Masala paste
  • 4 None lamb chops, about 1/2 lb each
  • 1 lb potatoes, peeled and cut into wedges
  • 2 tbsp oil
  • 1 None large onion, peeled and sliced
  • 14 oz can chopped tomatoes
  • 4 oz green beans, trimmed
  • None None fresh curry leaves, tp garnish
  • None None naan bread, warmed, to serve

Method

  • Spread the Tikka Masala paste on both sides of the pork chops, place in a non-metallic dish and leave to marinate 20 mins.
  • Meanwhile, boil the potatoes in salted water for 5-8 mins until just tender. Drain and set aside.
  • Heat oil in a large frying pan. Add the onion and cook 5 mins until softened and beginning to brown. Remove with a slotted spoon and drain on paper towels. Add the pork chops to the pan and cook 5 mins on each side until browned. Return the onions to the pan and add the potatoes and tomatoes. Season with salt and freshly ground black pepper. Cover and simmer 15 mins. Add the green beans, cover and cook 5 mins until just tender. Sprinkle with the curry leaves and serve immediately with the naan bread.
