- 4 tablespoons olive oil
- 14 cup chopped garlic clove (peeled)
- 1 12 cups chopped red onions (one large onion)
- 2 (28 ounce) cansof italian crushed tomatoes with oregano and basil (I prefer Furmano's Brand)
- 2 tablespoons white sugar
- 1 teaspoon red wine vinegar
- 23 cup fresh basil (washed and torn)
- 1 tablespoon kosher salt
- 1 teaspoon crushed red pepper flakes
Method
- In a large pot, saute the onion and garlic in oil for 10 minutes.
- Add the two cans of tomatoes, salt, red wine vinegar, sugar and red pepper.
- Cook on med heat for 25 minutes and then add the fresh basil.
- I sometimes serve with meatballs, italian sausage, or use as a base for other pasta dishes.
- The amount of the marinara will seem to grow while it cooks.
- Do not over cook!
- 30 minutes is all a good marinara needs!
