Ingredients

  • 4 tablespoons olive oil
  • 14 cup chopped garlic clove (peeled)
  • 1 12 cups chopped red onions (one large onion)
  • 2 (28 ounce) cansof italian crushed tomatoes with oregano and basil (I prefer Furmano's Brand)
  • 2 tablespoons white sugar
  • 1 teaspoon red wine vinegar
  • 23 cup fresh basil (washed and torn)
  • 1 tablespoon kosher salt
  • 1 teaspoon crushed red pepper flakes

Method

  • In a large pot, saute the onion and garlic in oil for 10 minutes.
  • Add the two cans of tomatoes, salt, red wine vinegar, sugar and red pepper.
  • Cook on med heat for 25 minutes and then add the fresh basil.
  • I sometimes serve with meatballs, italian sausage, or use as a base for other pasta dishes.
  • The amount of the marinara will seem to grow while it cooks.
  • Do not over cook!
  • 30 minutes is all a good marinara needs!
