Ingredients

  • 6 to 8 Granny Smith apples, peeled and chopped
  • 1/2 c. sugar
  • 8 oz. crushed pineapple (save juice)
  • 8 oz. Cool Whip
  • 1 Tbsp. flour
  • 1 egg, slightly beaten
  • 2 Tbsp. apple cider vinegar
  • 1 c. dry roasted unsalted peanuts, chopped

Method

  • Make sauce a day ahead.
  • Mix flour, sugar, pineapple juice, vinegar and slightly beaten egg in a saucepan.
  • Cook over medium heat until thick; chill overnight.
  • Mix chilled sauce with Cool Whip, crushed pineapple, diced apples and 3/4 cup peanuts.
  • Mix and top with remaining nuts.
