Ingredients
- 6 to 8 Granny Smith apples, peeled and chopped
- 1/2 c. sugar
- 8 oz. crushed pineapple (save juice)
- 8 oz. Cool Whip
- 1 Tbsp. flour
- 1 egg, slightly beaten
- 2 Tbsp. apple cider vinegar
- 1 c. dry roasted unsalted peanuts, chopped
Method
- Make sauce a day ahead.
- Mix flour, sugar, pineapple juice, vinegar and slightly beaten egg in a saucepan.
- Cook over medium heat until thick; chill overnight.
- Mix chilled sauce with Cool Whip, crushed pineapple, diced apples and 3/4 cup peanuts.
- Mix and top with remaining nuts.
