Ingredients

  • 1 1/2 lb. ground beef
  • chopped celery and onion to taste
  • 1 can red kidney beans with juice
  • 1 can whole kernel corn with juice
  • 1 can stewed tomatoes
  • 1 pkg. taco seasoning
  • 1 small can V-8 or tomato sauce or 1 c. water

Method

  • Brown ground beef; drain.
  • Cook celery and onion until translucent.
  • Add kidney beans, whole kernel corn, stewed tomatoes, taco seasoning and V-8 or tomato sauce or 1 cup water. Put all in crock-pot and let cook for 3 to 4 hours.
  • Crush taco chips in bottom of each soup bowl.
  • Top with shredded cheese.
