Ingredients
- 1 1/2 lb. ground beef
- chopped celery and onion to taste
- 1 can red kidney beans with juice
- 1 can whole kernel corn with juice
- 1 can stewed tomatoes
- 1 pkg. taco seasoning
- 1 small can V-8 or tomato sauce or 1 c. water
Method
- Brown ground beef; drain.
- Cook celery and onion until translucent.
- Add kidney beans, whole kernel corn, stewed tomatoes, taco seasoning and V-8 or tomato sauce or 1 cup water. Put all in crock-pot and let cook for 3 to 4 hours.
- Crush taco chips in bottom of each soup bowl.
- Top with shredded cheese.
