Ingredients

  • 1 (40 oz.) can sweet potatoes, drained
  • 1 tsp. grated lemon peel
  • 1/3 c. powdered milk or skim milk
  • 2 Tbsp. all purpose flour
  • 3/4 tsp. baking powder
  • 1 Tbsp. apple juice concentrate
  • 1/4 tsp. cinnamon
  • pinch of cloves
  • 1 tsp. vanilla extract
  • 1 tsp. fresh lemon juice
  • 2 egg whites

Method

  • Preheat oven to 325°.
  • Place sweet potatoes in large mixer bowl and beat until smooth.
  • Add remaining ingredients except egg whites; blend until smooth.
  • Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry.
  • Fold into potato mixture.
  • Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set.
  • Makes 6 servings.
