Ingredients

  • 4 medium potatoes, cooked
  • 1 1/2 c. sugar
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon
  • 1 1/2 c. milk
  • 1 stick margarine
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 3 eggs, separated

Method

  • Mash potatoes and margarine together.
  • Add sugar, salt, spices and flavorings.
  • Separate eggs.
  • Blend yolks with milk (add more milk if desired); add to potato mixture (will be a very thin consistency).
  • Pour into unbaked pie shell; cook at 400° until lightly browned (approximately 45 minutes).
