Ingredients

  • 1 c. cooked, mashed sweet potatoes
  • 1/3 c. melted butter
  • 2 eggs, beaten
  • 1/3 c. milk
  • 1/2 tsp. baking powder
  • pinch of salt
  • 1 tsp. ground nutmeg
  • 1 tsp. vanilla
  • 1 c. sugar
  • 1 unbaked 9-inch pie shell

Method

  • Combine sweet potatoes with all ingredients except pie shell, blending well with electric mixer (or hand mix using a wooden spoon).
  • Pour into pie shell.
  • Bake in preheated 400° oven about 30 minutes, or until golden and puffy.
  • Serve alone or topped with whipped cream.
