Ingredients

  • 1 egg, slightly beaten
  • 1 c. cooked mashed sweet potatoes
  • 1/4 to 1/2 c. sugar
  • 2 Tbsp. butter, soft
  • 3 Tbsp. shortening
  • about 2 c. flour

Method

  • Combine egg, sweet potatoes, sugar, butter and shortening in a mixing bowl; mix well.
  • Stir in enough flour to make a soft dough. (Dough will be softer than regular biscuit dough.)
  • Turn out on a floured surface; knead lightly a few times.
  • Roll to 1/4-inch thickness; cut with a 2-inch biscuit cutter.
  • Place on an ungreased baking sheet and bake at 350° for about 15 minutes. Yields about 16 biscuits.
