Ingredients
- 1/2 c. tomato juice
- 1/2 c. bread crumbs
- 2 tsp. dried onions
- 2 strips bacon
- 1/4 tsp. pepper
- 2 lb. ground beef
- 2 hard-boiled eggs
- 1 egg
- 1 tsp. salt
Method
- Put the first six things that are listed into a large bowl and stir.
- Add the ground beef.
- Blend everything together very well. Pour one half of this meat mixture into a large baking pan.
- Shape the meat into an oblong patty.
- Then make two hollows in the mixture and fit the hard-boiled eggs into them.
- Use the rest of the meat mixture to cover the eggs. Shape gently into a loaf.
- Lay the bacon strips on top.
- Bake at 350° for about an hour.
- When you serve this meat loaf, each slice will have a ring of egg in the middle.
