Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Garlic, Minced
  • 2 cups Chopped Fresh Tomatoes
  • 1 teaspoon Dried Oregano
  • 1/2 cups Kalamata Olives, Pitted, Sliced
  • 1 Tablespoon Capers, Drained
  • 1/2 cups Marinated Artichokes, Drained, Chopped
  • Salt And Pepper, to taste
  • Fresh Parsley And Grated Parmesan Cheese, For Topping (optional)

Method

  • 1. Heat oil in a saute pan over medium high heat and add garlic.
  • 2. When garlic is slightly browned, add all other ingredients to the pan.
  • 3. Cover and let it simmer for 5 minutes.
  • 4. Done! Add optional toppings and place over chicken, fish, pasta.
