Ingredients
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Garlic, Minced
- 2 cups Chopped Fresh Tomatoes
- 1 teaspoon Dried Oregano
- 1/2 cups Kalamata Olives, Pitted, Sliced
- 1 Tablespoon Capers, Drained
- 1/2 cups Marinated Artichokes, Drained, Chopped
- Salt And Pepper, to taste
- Fresh Parsley And Grated Parmesan Cheese, For Topping (optional)
Method
- 1. Heat oil in a saute pan over medium high heat and add garlic.
- 2. When garlic is slightly browned, add all other ingredients to the pan.
- 3. Cover and let it simmer for 5 minutes.
- 4. Done! Add optional toppings and place over chicken, fish, pasta.
