Ingredients

  • 1 qt. low-fat milk
  • 1 c. uncooked rice
  • 1 tsp. vanilla
  • 2 Tbsp. granulated sugar replacement
  • 2 Tbsp. margarine
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg

Method

  • Combine all ingredients in a well-greased baking dish.
  • Bake at 350° for 2 hours or until knife inserted in center comes out clean.
  • Stir occasionally the first hour.
  • Or, microwave on Low for 30 to 35 minutes or until knife inserted in center comes out clean.
  • Turn dish a quarter turn every 5 minutes.
  • Stir occasionally the first 15 minutes.
  • Serves 9.
