Ingredients

  • FOR THE GIANT COOKIE:
  • 1-3/4 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoons Salt
  • 1 stick Unsalted Butter, Softened
  • 1 cup Sugar
  • 1 Large Egg
  • 1 Tablespoon Milk
  • 1 teaspoon Vanilla Extract
  • FOR THE CREAM CHEESE FROSTING:
  • 4 ounces, fluid Cream Cheese, Room Temperature
  • 4 Tablespoons Unsalted Butter, Softened
  • 1-1/2 cup Plus 2 Tablespoons Confectioners Sugar
  • 3/4 teaspoons Vanilla Extract
  • 1/8 teaspoons Salt
  • FOR THE TOPPING:
  • Your Choice Of Fruits (I Used Bananas, Strawberries, And Kiwi)

Method

  • Preheat oven to 350°F.
  • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the butter and sugar. Beat in the eggs. Add the dry ingredients along with the milk and vanilla and beat until combined.
  • Press the dough into a In a large 9-inch cake pan. Make sure the top of the dough is even and as smooth as possible. Poke a lot of small holes in on the top of the dough with a toothpick.
  • Bake for 15-20 minutes or until the edges are golden brown and it feels done to the touch. Let cool completely before frosting.
  • To make the frosting, beat together the cream cheese, butter, confectioners sugar, vanilla, and salt until it forms a smooth mixture. Frost the giant sugar cookie and top with fruit. Enjoy!
