Ingredients

  • 6 medium bell peppers
  • 1 1/2 lb. ground beef
  • 1/2 c. chopped onion
  • 1 1/2 c. cooked rice
  • 1/4 c. diced bell pepper
  • 1/4 c. seasoned bread crumbs
  • 1 Tbsp. cajun seasoning
  • 1/4 lb. butter or margarine
  • 1/3 c. water
  • 1 1/2 slices cheese

Method

  • Cut tops off peppers and save; remove seeds.
  • Rinse and drain. In a 10-inch skillet, brown ground beef; drain.
  • Use tops of peppers to dice.
  • Add onion, rice, diced pepper, bread crumbs, seasoning and butter or margarine.
  • Cook on low heat for 10 minutes.
  • Fill peppers with mixture.
  • Place peppers in a glass baking dish.
  • Pour water in bottom of dish.
  • Cover with plastic wrap.
  • Microwave on Roast setting for 12 to 15 minutes.
  • Remove from microwave, removing plastic wrap.
  • Cover each pepper with 1/4 slice cheese.
  • Let stand 5 minutes before serving.
  • Serves 6.
