Ingredients
- 2 sticks softened butter
- 1 1/4 cups sugar
- 2 teaspoons vanilla
- 2 eggs
- 1 cup sour cream
- 12 frozen strawberries ~about large, put through a food processor, and pulverised
- 2 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons baking powder
Method
- In a stand mixer, cream butter and sugar together. Add each egg one at a time. Add vanilla, sour cream, and strawberries.
- Sift together dry ingredients and slowly add to the wet.
- Butter and parchment paper 2- 9 inch round cake pans
- Pour batter into pans, 350 degrees for 30 minutes, or till done by sticking a toothpick into them and coming out clean.
- Set on a cooling rack and cool all the way before icing.
