Ingredients

  • 2 sticks softened butter
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 cup sour cream
  • 12 frozen strawberries ~about large, put through a food processor, and pulverised
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder

Method

  • In a stand mixer, cream butter and sugar together. Add each egg one at a time. Add vanilla, sour cream, and strawberries.
  • Sift together dry ingredients and slowly add to the wet.
  • Butter and parchment paper 2- 9 inch round cake pans
  • Pour batter into pans, 350 degrees for 30 minutes, or till done by sticking a toothpick into them and coming out clean.
  • Set on a cooling rack and cool all the way before icing.
