Ingredients

  • 9 ounces strawberries hulled and sliced
  • 7 ounces smoked salmon sliced
  • 6 ounces mixed salad greens
  • 1/2 cup mint leaves loosely packed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • crusty bread to serve

Method

  • Place the strawberries, smoked salmon, salad greens and mint in a large bowl.
  • Whisk oil and vinegar in a small bowl and season to taste.
  • Drizzle the dressing over the salad and gently toss to combine. Serve with crusty bread.
