Ingredients

  • 12 oz. cooked beef or pork kielbasa sausage, cut into 1/2-inch slices
  • 1 (16 oz.) frozen broccoli, carrots and cauliflower
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1 large crushed garlic clove
  • 1/8 tsp. cayenne pepper
  • 1 (16 oz.) can black beans, rinsed and drained

Method

  • In wok or skillet over medium-high heat, cook kielbasa about 2 minutes, stirring frequently, until lightly browned.
  • Stir in frozen vegetables, tomatoes, garlic and pepper.
  • Bring to a boil. Reduce heat to low; simmer 5 minutes until vegetables are tender. Stir in beans and cook 1 to 2 minutes longer until heated through. Makes 4 servings.
