Ingredients
- 12 oz. cooked beef or pork kielbasa sausage, cut into 1/2-inch slices
- 1 (16 oz.) frozen broccoli, carrots and cauliflower
- 1 (14 1/2 oz.) can stewed tomatoes
- 1 large crushed garlic clove
- 1/8 tsp. cayenne pepper
- 1 (16 oz.) can black beans, rinsed and drained
Method
- In wok or skillet over medium-high heat, cook kielbasa about 2 minutes, stirring frequently, until lightly browned.
- Stir in frozen vegetables, tomatoes, garlic and pepper.
- Bring to a boil. Reduce heat to low; simmer 5 minutes until vegetables are tender. Stir in beans and cook 1 to 2 minutes longer until heated through. Makes 4 servings.
