Ingredients

  • 3/4 cup pitted dates coarsely chopped
  • 1/2 teaspoon baking soda
  • 3 butter tbps, softened
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/2 cup self rising flour
  • 1/4 cup all purpose flour
  • whipped cream to serve
  • strawberries to serve, if desired
  • butterscotch sauce
  • 3/4 cup heavy cream
  • 3 1/2 tablespoons butter

Method

  • Preheat oven to 350°F. Grease 4 - 5 oz ramekins. Combine dates with 1/2 cup boiling water. Stir in baking soda then set aside for 10 mins.
  • Meanwhile, cream butter and sugar until light and fluffy. Add egg, beating well. Fold in sifted flours and date mixture. Transfer to prepared ramekins and bake for 20-25 mins, until a skewer inserted in the center comes out clean.
  • For the butterscotch sauce, combine cream and butter in a small saucepan. Stir over low heat until sugar dissolves. Bring to a boil, reduce heat and simmer for 1-2 mins, until thickened slightly.
  • Serve puddings warm, drizzled with sauce. Accompany with heavy cream and strawberries, if desired.
