Ingredients

  • 3 medium yellow squash, sliced
  • 1 onion, chopped
  • 1/2 c. fine cracker crumbs
  • 1/3 c. Velveeta cheese, chopped
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 Tbsp. butter, divided

Method

  • Cook squash and onion in small amount of water until tender. Drain.
  • Add crumbs (reserve 1 tablespoon for top), cheese, egg, salt and 2 tablespoons butter.
  • Put in greased casserole dish and top with rest of crumbs.
  • Dot with 2 tablespoons of butter.
  • Bake at 375° for 15 minutes or until brown.
