Ingredients

  • 3 lb. yellow squash
  • 3 carrots
  • 2 large onions
  • salt and pepper to taste
  • 2 cans cream of chicken soup, undiluted
  • 1 (8 oz.) carton sour cream
  • 1 small pimento, chopped
  • 1 (8 oz.) pkg. seasoned stuffing mix

Method

  • Cook squash, carrots and onion in small amount of water.
  • Mash well. Add salt, pepper, sour cream, soup and pimento.
  • Grease casserole dish with butter and line with stuffing mix.
  • Pour mixture in and put rest of stuffing on top. Bake at 350° for 45 minutes.
