- 2 lb. yellow squash, cooked, drained and mashed
- 1 Tbsp. oil
- 1/2 c. mayonnaise
- 1/2 tsp. ground red pepper
- 1/2 c. crushed crackers
- 3 carrots, grated
- 1 medium onion, chopped
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1 Tbsp. margarine
- 1/2 c. sharp Cheddar cheese, grated
Method
- Saute carrots and onion in oil.
- Mix with black pepper, mayonnaise, salt and red pepper.
- Grease a casserole dish with 1 tablespoon of margarine.
- Pour mixture in dish.
- Sprinkle crushed crackers over top.
- Bake at 350° for 30 minutes.
- Remove from oven and sprinkle with cheese.
