Ingredients

  • 1 lb. ground beef
  • 1 c. raw rice
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1/4 c. oil
  • 1 can (No. 2 1/2) tomatoes
  • 1 tsp. salt
  • 1/4 tsp. basil
  • 4 green or yellow squash (about 7 inches long), sliced
  • grated cheese
  • dash of paprika

Method

  • Brown beef, rice, green pepper and onion in oil in heavy skillet.
  • Add tomatoes and seasonings.
  • Place sliced squash in a casserole and top with meat mixture.
  • Cover and bake at 350° for 30 minutes.
  • Top with cheese and paprika.
  • Bake another 15 to 20 minutes.
  • Makes 4 to 6 servings.
