Ingredients

  • 3 c. milk
  • 1 1/4 c. white cornmeal
  • 3 eggs
  • 2 Tbsp. butter
  • 1 3/4 tsp. baking powder
  • 1 tsp. salt

Method

  • Stir meal into rapidly boiling milk.
  • Cook until very thick. Stir constantly to prevent scorching.
  • Remove from heat.
  • Allow to cool.
  • Let mix become cold and stiff (if time permits).
  • Add well beaten eggs, salt, baking powder and melted butter.
  • Beat with mixer for 15 minutes (if time permits).
  • Pour into well-greased casserole pan or iron skillet.
  • Bake for 30 minutes at 375°. Serve immediately with lots of butter.
  • (The souffle will fall.)
