Ingredients
- 3 c. milk
- 1 1/4 c. white cornmeal
- 3 eggs
- 2 Tbsp. butter
- 1 3/4 tsp. baking powder
- 1 tsp. salt
Method
- Stir meal into rapidly boiling milk.
- Cook until very thick. Stir constantly to prevent scorching.
- Remove from heat.
- Allow to cool.
- Let mix become cold and stiff (if time permits).
- Add well beaten eggs, salt, baking powder and melted butter.
- Beat with mixer for 15 minutes (if time permits).
- Pour into well-greased casserole pan or iron skillet.
- Bake for 30 minutes at 375°. Serve immediately with lots of butter.
- (The souffle will fall.)
