Ingredients
- 1 (9-inch) pie shell (homemade or purchased)
- 3 eggs
- 2 c. milk
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- pinch of cayenne pepper
- 1 c. cooked, chopped spinach, well drained
- 2 Tbsp. minced onions, sauteed in 1 Tbsp. butter
- 1/2 c. grated Swiss cheese
Method
- Prick bottom dough all over with fork and bake in 425° (preheated) oven for 10 minutes.
- Combine the eggs, milk, salt, nutmeg and pepper in a bowl and beat to mix thoroughly.
- Mix in cooked spinach and the onion butter mixture.
- Sprinkle the cheese over the partially baked pie shell.
- Ladle the spinach custard mixture over the cheese.
- Bake at 375° for 35 to 40 minutes or until knife inserted in the center comes out clean.
