Ingredients

  • 1 (9-inch) pie shell (homemade or purchased)
  • 3 eggs
  • 2 c. milk
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  • pinch of cayenne pepper
  • 1 c. cooked, chopped spinach, well drained
  • 2 Tbsp. minced onions, sauteed in 1 Tbsp. butter
  • 1/2 c. grated Swiss cheese

Method

  • Prick bottom dough all over with fork and bake in 425° (preheated) oven for 10 minutes.
  • Combine the eggs, milk, salt, nutmeg and pepper in a bowl and beat to mix thoroughly.
  • Mix in cooked spinach and the onion butter mixture.
  • Sprinkle the cheese over the partially baked pie shell.
  • Ladle the spinach custard mixture over the cheese.
  • Bake at 375° for 35 to 40 minutes or until knife inserted in the center comes out clean.
