Ingredients
- 1 whole Egg
- 2 whole Egg Whites
- 2 Tablespoons Gruyere Cheese (grated, Divided Use)
- 2 teaspoons Milk
- 1 pinch Salt
- 1 pinch Pepper
- 1/4 teaspoons Olive Oil
- 2 Tablespoons Minced Shallot
- 1-1/2 cup Baby Spinach
Method
- Place a one cup oven proof baking dish on a rimmed baking sheet and place in the oven to heat the dish.
- Preheat oven to 450.
- While oven is heating, whisk together egg and egg whites, 1 Tablespoon cheese, milk, salt and pepper. Set aside.
- In a small skillet, heat 1/4 teaspoon olive oil, add the minced shallot and cook for 2 minutes. Add spinach and cook for another 2 minutes. Now, add the spinach mixture to eggs.
- Remove heated dish from oven and spray with cooking spray. Immediately pour in the egg mixture and top with the remaining 1 Tablespoon cheese.
- Bake until frittata is pulled up and golden, about 15 minutes.
