Ingredients

  • 1 whole Egg
  • 2 whole Egg Whites
  • 2 Tablespoons Gruyere Cheese (grated, Divided Use)
  • 2 teaspoons Milk
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1/4 teaspoons Olive Oil
  • 2 Tablespoons Minced Shallot
  • 1-1/2 cup Baby Spinach

Method

  • Place a one cup oven proof baking dish on a rimmed baking sheet and place in the oven to heat the dish.
  • Preheat oven to 450.
  • While oven is heating, whisk together egg and egg whites, 1 Tablespoon cheese, milk, salt and pepper. Set aside.
  • In a small skillet, heat 1/4 teaspoon olive oil, add the minced shallot and cook for 2 minutes. Add spinach and cook for another 2 minutes. Now, add the spinach mixture to eggs.
  • Remove heated dish from oven and spray with cooking spray. Immediately pour in the egg mixture and top with the remaining 1 Tablespoon cheese.
  • Bake until frittata is pulled up and golden, about 15 minutes.
