Ingredients
- 5.25 oz ricotta cheese
- 3/4 cup ground almonds
- 2 cloves garlic, peeled and finely chopped
- 2 oz Parmesan cheese, grated
- 1 None egg
- 1 3/4 lb salmon fillet, skinless, scored lengthwise down middle of fillet
- 3.5 oz baby spinach
- 3 tbsp olive oil
Method
- Preheat oven to 325°F. Mix ricotta, almonds, garlic, Parmesan cheese and egg and season to taste. Spread 3 tbsp mixture inside salmon then add 1/2 spinach. Repeat then tie salmon together with butcher's twine. Place in a greased baking dish, drizzle with oil, season and bake for 25-30 mins.
