Ingredients

  • 5.25 oz ricotta cheese
  • 3/4 cup ground almonds
  • 2 cloves garlic, peeled and finely chopped
  • 2 oz Parmesan cheese, grated
  • 1 None egg
  • 1 3/4 lb salmon fillet, skinless, scored lengthwise down middle of fillet
  • 3.5 oz baby spinach
  • 3 tbsp olive oil

Method

  • Preheat oven to 325°F. Mix ricotta, almonds, garlic, Parmesan cheese and egg and season to taste. Spread 3 tbsp mixture inside salmon then add 1/2 spinach. Repeat then tie salmon together with butcher's twine. Place in a greased baking dish, drizzle with oil, season and bake for 25-30 mins.
