Ingredients

  • 4 tbsp olive oil, extra virgin
  • 1 large onion, chopped
  • 4 garlic cloves, finely chopped
  • 1 can diced tomatoes with green chilies
  • 500 ml chicken stock
  • 3 medium potatoes, peeled and chopped
  • 50 grams grated parmesan cheese (optional)
  • 1 tbsp cornflour mixture

Method

  • In a medium pot, heat the olive oil over a medium heat.
  • Add the onion and garlic and fry for 5-6 minutes.
  • Next add the can of tomato and stir.
  • Cook for 2 minutes or so.
  • Add the potatoes and salt.
  • Next add the stock and bring to the boil.
  • Cook the potatoes for 15 minutes.
  • Or until they are cooked.
  • Prepare the cornflour by adding 1 tablespoon of cornflour with 2 tablespoons of water and mixing well until well combined.
  • And then add to the stock just before it starts to boil
  • You may need to add extra water during cooking.
  • Add 1 tablespoon at a time of the oyster and soya sauce until it reaches your desired flavour.
  • When the pan is off the heat add the parmesan cheese.
  • Check seasoning.
  • When serving add the croutons, drizzle a splash of olive oil and enjoy.
