Ingredients
- 4 tbsp olive oil, extra virgin
- 1 large onion, chopped
- 4 garlic cloves, finely chopped
- 1 can diced tomatoes with green chilies
- 500 ml chicken stock
- 3 medium potatoes, peeled and chopped
- 50 grams grated parmesan cheese (optional)
- 1 tbsp cornflour mixture
Method
- In a medium pot, heat the olive oil over a medium heat.
- Add the onion and garlic and fry for 5-6 minutes.
- Next add the can of tomato and stir.
- Cook for 2 minutes or so.
- Add the potatoes and salt.
- Next add the stock and bring to the boil.
- Cook the potatoes for 15 minutes.
- Or until they are cooked.
- Prepare the cornflour by adding 1 tablespoon of cornflour with 2 tablespoons of water and mixing well until well combined.
- And then add to the stock just before it starts to boil
- You may need to add extra water during cooking.
- Add 1 tablespoon at a time of the oyster and soya sauce until it reaches your desired flavour.
- When the pan is off the heat add the parmesan cheese.
- Check seasoning.
- When serving add the croutons, drizzle a splash of olive oil and enjoy.
