Ingredients

  • 1 pkg. broken vermicelli
  • 1/2 c. chopped onion
  • 1 can tomatoes, cut up
  • 1 1/2 Tbsp. Italian seasoning
  • nonstick spray coating
  • 1 pkg. turkey breakfast sausage
  • 1 clove garlic, minced
  • 1 can tomato paste
  • 1 c. shredded Mozzarella cheese
  • 1/8 tsp. crushed red pepper

Method

  • Cook vermicelli according to package.
  • Drain well; set aside. Meanwhile in a large skillet, cook turkey sausage, onion and garlic until sausage is no longer pink and onion is tender.
  • Drain off fat.
  • Stir in undrained tomatoes, tomato paste, Italian seasoning and crushed pepper.
  • Spray a casserole dish with nonstick coating.
  • Place half of the cooked vermicelli in the bottom of the dish.
  • Top with half of the sausage mixture and half of the Mozzarella cheese.
  • Repeat layers.
  • Cover the dish loosely with foil.
  • Bake in a 350° oven for 25 to 30 minutes or until heated through.
  • Let stand 10 minutes and serve.
