Ingredients

  • 4 Tablespoons Unsalted Butter
  • 13 cups Pure Maple Syrup
  • 1 Tablespoon Fresh Ginger, Sliced
  • 1 teaspoon Salt
  • 1 teaspoon Ground Ginger
  • 1/4 teaspoons Cayenne Pepper
  • 1 pound Shelled Walnuts
  • Crystallized Ginger To Taste, Minced (optional)

Method

  • Preheat the oven to 300 degrees F. Combine the butter, syrup, salt, ginger, and cayenne in a small sauce pan.
  • Melt the butter over low heat and simmer for 2 to 3 minutes.
  • Put the walnuts in a bowl and add the melted glaze.
  • Toss to coat and then spread the walnuts in a single-layer on a parchment-lined baking sheet.
  • Bake the nuts for 40 to 50 minutes, stirring at 15-minute intervals.
  • When the nuts are light and almost dry when you toss them, they are done.
  • Remove the nuts from the oven and cool completely.
  • Nuts will be very hot.
  • Once cooled sprinkle with crystallized ginger and serve.
  • Nuts can also be stored in an airtight container.
