Ingredients
- 1 tbsp vegetable oil
- 500g minced chicken
- 2 tsp grated ginger
- 1 tbsp lemongrass, finely sliced
- 100g water chestnuts, chopped
- 2 large red chillis, finely sliced
- 2 tbsp soy sauce
Method
Heat vegetable oil in a wok, add chicken and stir-fry over medium heat for 3-4 minutes or until chicken is half cooked. Add ginger, lemongrass, water chestnuts and chillis and cook for 2-3 minutes,
then add 1/3 cup water and soy sauce and simmer for 3-5 minutes. Divide chicken among 4 small serving bowls and serve with a selection of raw vegetables.
