Ingredients

  • 1 lb. fresh green beans
  • 1/2 c. chopped bell pepper
  • 1/4 c. chopped onion
  • 1 Tbsp. vegetable or olive oil
  • 2 medium tomatoes, peeled and chopped
  • 1/4 to 1/2 tsp. dried whole basil
  • 1/4 tsp. dried whole rosemary
  • 1/2 to 1 tsp. salt
  • 1/4 tsp. pepper

Method

  • Remove strings from beans; wash beans thoroughly. Cut beans into 1 1/2 inch pieces. Cook beans in boiling salted water 15 to 20 minutes or until crisp tender. Drain and set aside.
  • Saute green pepper and onion in hot oil until tender. Add tomatoes, basil, rosemary, salt, pepper, and beans, mixing well. Heat thoroughly.
