Ingredients

  • 1 lb. ground beef
  • 4 tsp. butter
  • 1 c. chopped onions
  • 1 green pepper, chopped
  • 1/4 c. diced celery
  • 2 c. stewed tomatoes
  • 2 tsp. salt
  • 1/8 tsp. black pepper
  • 3 c. hot, cooked rice
  • chopped parsley

Method

  • Brown ground beef in butter.
  • Add onions, green pepper and celery and simmer on range top until almost tender.
  • Pour into ovenproof casserole (4 quarts or larger).
  • Mix in tomatoes, salt, pepper and rice.
  • Blend well.
  • Garnish top with chopped parsley. Bake in a 350° oven for 30 minutes.
  • Serves 8.
