Ingredients
- 1 lb. ground beef
- 4 tsp. butter
- 1 c. chopped onions
- 1 green pepper, chopped
- 1/4 c. diced celery
- 2 c. stewed tomatoes
- 2 tsp. salt
- 1/8 tsp. black pepper
- 3 c. hot, cooked rice
- chopped parsley
Method
- Brown ground beef in butter.
- Add onions, green pepper and celery and simmer on range top until almost tender.
- Pour into ovenproof casserole (4 quarts or larger).
- Mix in tomatoes, salt, pepper and rice.
- Blend well.
- Garnish top with chopped parsley. Bake in a 350° oven for 30 minutes.
- Serves 8.
